Restaurant Aure

After 81 working days

Denmark has nurtured a talented generation of chefs and gastronomic entrepreneurs who have succeeded in putting our country on the world map. Historically, Denmark holds a strong position on the international gastronomic scene, with Restaurant Aure being the latest and perhaps best example of how one can compete at the top with equal parts hard work, dedication, and great talent.

In 2024, Restaurant Aure was awarded its first Michelin star after being open for only 81 days, and at the same time, head chef Nicky Arentsen received the prestigious Young Chef Award 2024.

Polar Bear x Aure

“Restaurant Aure has already achieved receiving a Michelin star, and Nicky has been named Young Chef 2024 in record time – something that, even on an international scale, is almost unthinkable in just 81 days. This commands huge respect, and that is why I would like to support Aure, so they continue to be in the gastronomic super league and make Denmark one of the most creative, inspiring, and delicious countries to visit.” – Michael Lund Petersen.

"Let me reveal right away that, in my view, Aure has what it takes to achieve one of the coveted stars.

Nicky Arentsen has previously worked at the three two-starred restaurants AOC, Henne Kirkeby Kro, and Jordnær. At the latter, he was sous chef, and it is clearly the inspiration from the Gentofte restaurant that shines through the most on Aure's menu, which consists of a cavalcade of meticulously served luxury ingredients with light Japanese inspiration."

"Nicky Arentsen declared before the opening of Aure that he was aiming for a Michelin star, and to say out loud what one dreams of and believes can be achieved is apparently so attention-grabbing that the restaurant has been full since its opening. Because how we love to be part of the journey toward either greatness or failure."

"Nicky Arentsen is a divinely gifted gastronomic nerd, and the level of detail in each dish was ultra-complex."

"Baking bread and roasting must be Nicky Arentsen's key competencies, and that says a lot with a menu where everything radiated precision."
